TODAYS COCKTAIL IS ” BELLINI ”

THIS DELICIOUS CONCOCTION WAS CREATED BY GIUSEPPE

CIPRIANI AT HERRY’S BAR IN VENICE, AROUND 1943

SERVES ONE

1 MEASURE FRESH PEACH JUICE MADE FROM LIGHTLY

SWEETENED LIQUIDIZED PEACHES

SUPERFINE SUGAR

3 MEASURES CHAMPAGNE, CHILLED

DIP THE RIM OF A CHILLED FLUTE GLASS INTO SOME PEACH JUICE

AND THEN INTO THE SUGAR TO CREATE A SUGAR-FROSTED EFFECT

SET THE GLASS ASIDE TO DRY. POUR THE PEACH JUICE INTO THE

FLUTE CAREFULLY FILL WITH CHAMPAGNE AND STIR GENTLY.
